Eric Salazar, the brewer of this sour peach hybrid best describes the beer and processes he goes through to make it in his own words. "For the strong golden half of this beer I used aged hops and an extended boil like a traditional lambic brew. Aged hops will impart all the preservation aspects of the hops but not the bitterness, i.e. the low IBU's. boil time is extended to boil off any off flavors from the aged hops. This beer underwent 4 separate fermentations 1) Original Biere De Mars (BDM) base beer in stainless 2) BDM base beer two years in wood cellar 3) Recent strong golden brew in stainless 4) Post blend we added yeast for a final fermentation. The Final fermentation took care of all the fermentable sugars from the peach addition leaving only a slight hint of the fruit and opening up the flavor profile, I didn't want this to be just another fruit beer."
